Ingredients:
1/2 cup maple sugar
1/2 cup brown sugar
2 T. flour
1 unbaked 8-inch pie shell
1/3 cup whipping cream
Mix maple sugar, brown sugar and flour. Sprinkle evenly over pie shell. Pour cream over sugar mixture and bake at 350° F until pastry is golden brown (35 to 40 min). Serve warm.
Maple trees were the only source of sugar for many pioneer families in eastern Canada. Each spring they stock-piled enough rich brown cakes of maple sugar to last all year. Brown sugar can be substituted for the maple sugar.
